Recipe for couscous with vegetables:

Ingredients: Ingredientes para 2 personas:250 grams couscous, 1 red pepper, 1 green pepper, 1 aubergine, 1 onion, 1 clove of garlic, virgin olive oil, salt and pepper

Preparation: Chop up the vegetables.

Put 3 or 4 spoonfuls of olive oil into a frying pan and fry the vegetables at a medium heat for 8 minutes. Then add salt and pepper to taste.

Put the couscous into a saucepan with a little oil and fry until it has turned golden. Then add a litre of water and let it boil for around 30 minutes. Once boiled, drain and mix it with the fried vegetables.

Other types of fruit or vegetables, such as pumpkin or dates, can be added to this dish.
